Over 25 years ago, we ate our first Neapolitan pizza on a trip to Naples, Italy. That trip started a quiet dream, one that sat with us for years before we brought it to life.

Our Pizza Story

We didn’t just want to serve pizza, we wanted to do it right. That meant training with the VPN (Associazione Verace Pizza Napoletana), sourcing the right ingredients, and bringing in a custom oven straight from Naples.

Alongside our dear friend and bad ass chef, Kari Mueller, we trained in L.A. under master pizzaiolo Peppe Miele. We each earned our individual VPN certifications, and our goal is for VIA to be fully recognized by the VPN in the years to come.

Our dough has a 24-hour fermentation period in our one-of-a-kind dough room and our custom-built pizza oven from Naples, Italy (her name is d.b.) cooks without wood, giving our dough a purer expression, which is what we prfer.

Our toppings change with the seasons and every pie we make reflects everything we’ve learned and everything we still love about the food that started it all.

She’s not just an oven, but a true beauty with a personality all her own (getting her into the building was a saga we’ll never forget). Around here, she’s family: equal parts power and charm, delivering that perfect bake and just the right kiss of character every time.

    At VIA, our dough isn’t just a base for pizza…it’s the heart of the experience. Each batch goes through a slow, 24-hour fermentation process in our dedicated dough room, allowing time for the flavors to deepen and the texture to become light, airy, and crisp in all the right places.

    This careful fermentation also breaks down gluten naturally, making our dough easier to digest than standard pizza crusts. It’s pizza that loves you back-crafted with intention, tradition, and just enough science to leave you feeling good long after the last bite.
